Endicott, NY (WBNG Binghamton) A chef from Finland travels thousands of miles and several time zones to get a taste of the Southern Tier.
Tommi Hedman took a tour of the Federal Processing Plant of Sam Lupo and Sons in Endicott on Monday morning.
Hedman runs two restaurants in Finland and has worked in the restaurant and hotel industry for 25 years.
As part of Binghamton University's Global Chef Program, Hedman is sharing traditional cooking techniques with Binghamton University students, faculty and the school's on-site culinary team.
The program, organized by Sodexo, delivers diverse dining experiences to the campus and exposes students to new cultures.
"This is a once in a lifetime opportunity for me to go to visit a different country and get to know how the other country's chefs, all the manners, how you do the work here and what kind of raw material are you using to do the food," Hedman said. "I'm a kid in the candy store here. Everything is new to me. It's my first visit in the U.S., so I'm enjoying every second of it."
During his tour, Hedman saw the operations behind preparing and packaging Lupo's world-famous spiedies.
Hedman also got to taste some lamb, pork and chicken spiedies and says he plans on bringing the recipe back to Finland.
