Ingredients

4 eggs
1/2 cup grated Parmesan cheese
1/2 cup chopped onion
1/2 teaspoon seasoned salt
1/2 teaspoon dried oregano
1/2 teaspoon garlic powder (see Note)
1/4 cup chopped fresh parsley or 2 tablespoons dried parsley flakes (optional)
1/2 cup vegetable oil
1/2 cup all-purpose flour
1 cup biscuit baking mix
3 cups grated zucchini |

Directions
- Preheat oven to 375°F. In a large bowl, beat eggs, add remaining ingredients, and mix well. Pour mixture into an ungreased 9-inch square broiler-proof baking pan; bake 30 to 35 minutes.
- To brown top, place pan under the preheated broiler for the last 2 or 3 minutes. Cool for a few minutes then cut into squares.
NOTE - If you have the time, give this extra zip by using chopped fresh garlic instead of garlic powder.
